  java/eclipse: update to 4.39

Track FreeBSD's rewrite of the port: 4.39 abandons the old multi-snapshot
sources plus hand-maintained patch set in favour of chirontt's pre-patched
repos (which carry the FreeBSD/cross-build fixes and gtk.freebsd natives)
and NorbertXYZ's prebuilt offline maven repository. All 17 files/patch-*
and the post-extract/pre-patch reorg scripts are therefore removed.

Switch to GH_TUPLE, maven39, openjdk21 (JAVA_VERSION 21+), USES=gl with
USE_GL, gtk30+gtk40, c++17, and install the SDK icons into hicolor.
Restrict to amd64.

Two MidnightBSD-specific fixes, both because uname/os.name report
"MidnightBSD" rather than "FreeBSD":
- OS=FreeBSD in MAVEN_ENV, so chirontt's SWT/equinox build.sh scripts take
  the FreeBSD branch (gmake on make_unix.mak) instead of running bsd make
  on a GNU makefile.
- -Dos.name=FreeBSD in MAVEN_OPTS, so the embedded Equinox frameworks Tycho
  launches (e.g. tycho-document-bundle schema-to-html) compute
  osgi.native.osname=freebsd and resolve com.sun.jna's native capability;
  otherwise pde.core et al. fail to load and the doc.isv build dies.

Builds to completion (BUILD SUCCESS) and packages cleanly on amd64.
