  databases/postgresql18-server: fix doubled staging path when stripping client binaries (#1507)

Fixes the Magus \`make fake\` failure for postgresql15-client
(https://www.midnightbsd.org/magus/ports/2261566) and
postgresql16-client.

\`do-install\` already receives \`\${FAKE_DESTDIR}\` prepended to
\`\${PREFIX}\`, so the CLIENT_ONLY strip line's explicit
\`\${FAKE_DESTDIR}\${PREFIX}\` doubled the staging path and \`strip\`
failed with "No such file or directory". Dropping the extra
\`\${FAKE_DESTDIR}\` matches the other strip lines in the same target.

Not build-tested locally (this session runs on Linux); please confirm
via a Magus rerun of the client ports.
