  shells/zsh: fix build failing on missing autoheader

post-patch runs REINPLACE_CMD on configure, which makes it newer than
stamp-h.in. The upstream Makefile then tries to regenerate config.h.in
with autoheader, which is not available in the build chroot. Touch
stamp-h.in after the edit so the rule does not fire.

Also remove the .bak file left behind by the reinplace on
zsh-mime-setup and add the _mdo completion (new in 5.9.2) to the
plist so a clean fake reports no stray files.
