  x11/libxkbcommon: fix version-script probe so symbol versions are applied

Meson's -Wl,--version-script capability check links an executable with a
map that localizes everything. On MidnightBSD crt1.o defines environ and
__progname while libc.so references them, so both LLD and GNU ld reject
the link ("non-exported symbol 'environ' in '/usr/lib/crt1.o' is
referenced by DSO '/lib/libc.so.7'"). The probe then reports unsupported
and the project maps (V_0.5.0 .. V_1.12.0) were silently dropped from the
built libraries.

Link the probe as a shared object instead, mirroring the FreeBSD ports
fix, and add HAS_SYMBOL_VERSION so fake-sanity fails if the versions are
ever dropped again. Bump PORTREVISION since the installed ABI changes.
